It is my daddy's turn to prepare his own style of chicken today! He has already cooked this last night and left in the fridge so it can absorb more of the taste. He used lots of ginger and salt, he loves salty food but of course I try to ask him to not add too much.
I help him to scrub the chicken with salt, so as to 'exfoliate' the skin by removing all the loose skin and whatsoever hidden dirt on the skin. After all the scrubbing, the chicken feels like a baby. Woohoo!
So smooth, shiny and blingy!
Got chicken so must have chicken rice, right? I need to prefect that recipe.
I'm using 4 cups of rice here. After washing the rice, soak it in water for 10 mins or so.
While soaking the rice, that's the amount I will need.
I smash the cloves of garlic with the side of the chopper and sliced the ginger.
Drain the water, as much as possible.
Turn on the rice cooker and let it heat up. Put 5 tablespoons of sesame oil and 3 tablespoons of oil, add in all the garlic and ginger.
Stir fry till fragrant, this is going to make you hungry. *drool*
You can do the stir-frying using a pot over a stove depending on your preference. I'm using the rice cooker because I don't want to do transferring and more washing.
Add the rice, stir-fry for a few minutes. Doing this will add a lot of flavour!
Pour in 4 to 5 cups of chicken stock. You can use stock cubes or cook the chicken stock yourself - you will have chicken stock if you are cooking the simple white chicken.
Cover and let it cook.
Once it's done... tataa! Smells too good.
Fluff it up and pick out all that garlic and ginger.
